Corn Soup....amazing!

Day 4 and we need a change. I thawed out a bag of organic corn. Maybe not completely raw, but they only blanch it...so let me dream.

I put a bag of thawed corn in the vita-mix, added cilantro, a juiced lime, and salt and pepper. We blended till it was a bit arm and served with cucumber slices. It was very, very good!!

Lettuce Wraps...YUM!

This is day 2. We are seeing a bit of cravings around here. But, that was to be expected. We are juicing, eating seeds, nuts. Plenty of fruits.
Now I am feeling a bit better, I need to start getting recipes more organized! This is on tonight's menu:

Lettuce Wraps

INGREDIENTS:

* 2 very ripe avocados
* 3 tomatoes, diced
* 1/2 jalapeno pepper, diced
* 2 tbsp yellow onion, diced
* 3 cloves fresh garlic, minced
* 1/4 cup fresh cilantro, chopped
* kernels from one ear raw organic corn
* 2 tsp fresh lime juice
* 6-8 large romaine lettuce leaves

PREPARATION:

In a medium sized bowl, mash the avocado.

Add remaining ingredients and stir until well mixed.

Spread 2-3 tablespoons of this mixture onto lettuce leaves and wrap. Enjoy!

Hemp Brownies...no, not the kind you heard about in school!

First, there is a BIG misunderstanding about Hemp. Hemp is not pot. It is a cousin, and doesn't contain the THC that marijuana contains. It will not get you high.

Okay, now the yummy recipe!

Raw Chocolate Hemp Brownies


Hemp seeds are a nutritional powerhouse. Try these power bars for an excellent boost of protein!

Ingredients:
* 3/4 cup ground hemp/hemp butter
* 1/4 cup hemp seeds
* 1/2 cup almond meal
* 1/8 cup agave
* 1/4 cup cocoa powder

Directions:

1. Grind 3/4 cup of hempseed until it becomes hemp butter (I use a coffee grinder)
2. Add hemp seeds, almond meal, agave, and cocoa powder
3. Press into a square container that will allow for desired thickness.
4. Place in refrigerator for 30 minutes or until hardened.
5. Cut into small squares and serve.
